For the pasta with avocado sauce, cook the pasta in salted water until al dente. Meanwhile, combine the avocado flesh and sour cream and blend well with a hand blender.
Add the lime juice and season well with salt and pepper. Wash the peppers and cut into small cubes. Mix with the sauce. Mix 3 tablespoons of olive oil into the sauce.
Strain the pasta and quickly mix with the sauce. Sprinkle the pasta with avocado sauce with freshly grated Parmesan and serve.
