A great pasta dish for any occasion:

Clean spinach, place wet in a well-sealed saucepan and do until it collapses. Squeeze well. Saute spinach with shallots and garlic, pressed through, in half the butter until soft and all liquid has evaporated. Season well with salt and freshly ground pepper.

Meanwhile, boil the cream in a wide-bottomed saucepan until reduced by half. Cut salmon into small cubes and steam in the remaining butter for two to three minutes until soft. Mix salmon and Sbrinz into the cream.

In the meantime, make pasta al dente.

Drain pasta and evaporate for a moment. Add to spinach in saucepan and mix very well. Pour cream sauce into a warmed baking dish and arrange pasta on top, mixing with two forks.
