For Mediterranean salad, first prepare the marinade.
For the marinade, mix well vinegar, oil and water with sugar, 1 tsp salt and 1 tsp mustard and freshly ground black pepper.
Wash the lettuce and cut into bite-sized pieces. Arrange on plates together with the croutons. Arrange the tomatoes, eggs and anchovy fillets decoratively and sprinkle the capers on top.
Drizzle the marinade over the top and serve sprinkled with freshly shaved Parmesan.
