For the orange stars, finely peel an organic orange with a zester and cut the zest into tiny cubes. Then squeeze the orange.

Beat the egg whites with the granulated sugar until very stiff, add about 2 tablespoons of orange juice. Take about one third of the egg white mixture for the glaze of the stars.

Mix the peanuts with the flour, add the orange zest and 60 g of brown sugar, then fold in the beaten egg whites. The mixture should be quite sticky, but malleable.

Sprinkle remaining brown sugar on countertop, roll out dough on it, brush with beaten egg whites, then cut out stars.

Place the stars on a baking tray lined with baking paper (this works very well with a flat knife blade from a frosting knife) and bake at 140 degrees hot air rather lightly.
