Mashed potatoes:


For the mashed potatoes, boil potatoes in their skins until soft, peel and mash with hand blender. Add warm milk, butter and salt. Peel and halve avocados, cut lengthwise into thin slices and fan on plates. Press garlic and spread on avocado. Marinate with vinegar and salt. Add a large dollop of mashed potatoes and drizzle with olive oil.
