With scissors, score the scampi along the back through the shell and gut. 2.

Cut the chili pepper in half lengthwise, remove the seeds and dice finely. Chop dill. Chop garlic finely. Stir oil through with garlic, dill, chile and lemon zest. Fill crayfish tails along the back with the herb paste and refrigerate until grilling.

Season crayfish tails with salt and pepper and grill on hot broiler for 5-6 min. Remove the head, peel off the crab tails and bring to the table with the steaks.
