A dish from the Black Forest.
Preparation :
Rinse the berries. Cut the berries maybe (for example strawberries) and marinate them with powdered sugar and port wine.
Squeeze the lemon.
Preparation :
Beat the egg whites with the juice of one lemon and half of the sugar until very stiff.
For the sauce, beat the yolks with the remaining sugar.
Bring the milk to a boil with the vanilla sugar. Slowly pour the boiling milk over the yolks and fold in. Carefully heat to 85 °C.
In a shallow saucepan or frying pan, bring water to a boil.
Using a spoon, scoop out “snowballs” of the snow and poach in the water. Cook each side for about three to four min.
Pour the sauce into a deep dish. Place the berries on top and garnish with the “snowballs”.
