To make the cake, start by softening the lemons in unsalted water for about half an hour. Preheat the oven to 180 degrees. After the lemons are cooked, cut them open, remove the seeds and grind the whole lemons very finely. Beat the egg yolks with half the sugar until very creamy. Mix in the lemon puree, also the previously finely chopped almond kernels and the baking powder. Beat the egg whites with the remaining sugar until whipped egg whites form, then gently fold in as well. Butter a cake pan and pour the mixture into it. Bake in the oven at 180 degrees for about half an hour.
Cut the fruit into small bite-sized pieces, then place in a sieve and drain well.
Cook the souffle foam as follows: whip the egg whites very well and stiffly, then finely sift in the sugar.
To serve, remove the cake from the pan, place the fruit on top and add the souffle foam. Then, in the oven at the highest temperature, let the foam brown briefly (about 5 minutes). Then take it out, pour a little vodka over it and flambé it on the spot. Cut everything together into pieces and bring to the table.
