Buy the porterhouse steaks of organic pasture-raised beef at the butcher of his confidence or directly from the farmer and make sure that it is well segregated! Have them cut into 3-4 cm thick slices.

Remove the meat from the refrigerator at least 1 hour before grilling, it should be at room temperature for grilling.
