Cut the ginger diagonally to the fiber into slices, crush with sugar. Beat eggs with sugar for 5 minutes (important) at highest speed until creamy. Beat butter with ginger puree, salt and lemon zest until sugar is dissolved.

Stir flour into egg cream alternately with butter cream in several portions. Fill into piping bag or pastry press and pipe 6 cm long strips onto a baking sheet lined with parchment paper. Leave plenty of space, the cookies will separate.

Bake in a heated oven at 220 degrees (convection oven 190 degrees) for 7 minutes.
