According to the recipe:


cooked, peeled potatoes from the peel and dice. Cut off the belly flaps and fry them with the minced meat in a frying pan.

Then mix the meat and the potatoes (not too cooled down) with a little bit of beef broth and knead well. Season the mixture with marjoram, salt and pepper and fill it into the stomach.

During the baking time, baste a few times.

The “Saumagen” is served with sauerkraut and stewed apples.
