For the fruity apricot jam, pit and puree the apricots.

Place in a large saucepan and mix well with the preserving sugar. Bring to a boil over high heat, stirring constantly, and boil until bubbly, 3 minutes.

Remove from heat and immediately pour into prepared jars. Fill to the brim.

Leave the apricot jam upside down for 5 minutes.
