A simple but delicious cake recipe:
Beat the fat in a baking bowl with sugar, cinnamon and calvados until creamy. Gradually add the eggs and the juice of a lemon and zest. Mix the flour with the baking powder and fold in alternately with a little bit of milk until the dough falls from the spoon with difficulty tearing.
Remove the skin from the apples and cut them in half, remove the core. Finely dice the flesh. Pick out the currants, rinse and dry them.
Preheat the oven to 175 °C. Fold the apples and currants into the dough. Grease the pan and put the dough in it, bake for about 60 minutes, maybe covering it with parchment paper for the last 10 minutes. Bake for about 10 minutes, then turn out onto a wire rack and cool.
It is served with whipped cream, under which you can add a little bit of eggnog!
