For the fried egg rice with chicken breast and vegetables, cut the chicken breast into small pieces and the spring onions into thin rings.
Defrost the vegetables. Cook the rice according to package directions until tender and drain well.
Heat the canola oil in a wok pan and fry the chicken cubes and rice in it. Add the vegetables.
Once the vegetables are hot, stir in the eggs and let them set. Season with soy sauce, oyster sauce and the chili pepper.
Serve the fried egg rice with chicken breast and vegetables in a bowl, garnish with fresh cilantro or basil and sprinkle with sesame seeds.
