Clean fish fillet, acidify and season with salt. Boil water with salt and steam fish fillet for 15 to 20 minutes.
Cut cooled fish fillet into pieces and marinate with cucumber juice.
Quarter apples, remove core. Blanch (scald) peaches, peel and remove stones. Cut apples, peaches and cucumbers into cubes and add to the fish form.
Mix the ingredients to make a sauce and season to taste. Mix salad ingredients with sauce and season repeatedly.
Serve the cocktail on lettuce leaves.
