cut out, core, hollow out and arrange as a bowl on a flat plate. Add the juice of one lemon, sugar and a dash of white wine to the melon pulp, mash it, fill it into the melon bowl and garnish with a mint leaf. For the crêpes, mix the remaining almond flakes with milk, flour, eggs, sugar, salt and olive oil to make a batter.
Finish baking in olive oil to make crêpes, fold and arrange on a flat plate. Cut the grapes in half, remove the seeds, caramelize in sugar, extinguish with red wine and cook.
Arrange everything on a flat plate and decorate with powdered sugar.
