This dish has gone down in history and to date, in the countries of the Bible, various stews with red lentils are known as “Esau’s lentil dish”. Esau was all too happy to be seduced by the fragrance of a well-prepared meal. As a result, he became the victim of intrigue by his brother and mother. (Genesis 25 and 27) In a large frying pot, sauté the onion in olive oil with the cumin and coriander. Then brown the garlic briefly. Add the lentils and clear soup. Stir well and allow to bubble up. Five to ten min before serving, add spinach to soup. Season with salt
