Preparation – Marinate the perch fillets with the juice of a lemon and pepper – Prepare the mushrooms (e.g. peel, remove woody parts and dirt) and cut into slices – Chop the shallots and garlic – Chop the chives.
Preparation – Season perch fillets with salt, flour, lightly pat – Fry in oil on both sides until golden brown – Arrange on preheated dishes and keep warm – Sauté mushrooms with shallots and garlic in butter and season – Spread evenly over the fish fillets – Sprinkle with chives
