Soak the Waldviertler spelt rice in water overnight. The next day, drain the water. Cover the spelt rice with water in a pot, add thyme sprigs and cook until al dente. Then clean and wash the spinach.
In a frying pan, cream butter, sauté shallots and garlic. Add spinach and let it fall together. Season with salt, pepper and nutmeg. Mix in spelt rice and whipped cream and cook briefly until creamy.
Finally, season to taste with tarragon vinegar. Arrange purple wheat with spinach and garnish the Waldviertler spelt rice as desired.
