For the cheese spaetzle, whisk together the eggs, salt and water, then whisk in the flour until the dough bubbles. Let rest for 10 minutes.

Cut peeled onion into thin rings and mix with the 1 tablespoon flour. Fry in butter oil until golden brown.

Bring plenty of salted water to a boil and scrape the dough in with a spƤtzle strainer. When the spaetzle float to the top, drain slightly with a slotted spoon into a bowl and add the mixed cheese in layers on top.

Sprinkle the crispy onion over the cheese spaetzle.
