For cheese-apple croissants, dice the Munster and apple, sprinkle with a squeeze of lemon juice and add raisins. Season vigorously with pepper.

Cut the puff pastry in half diagonally and brush with egg yolk. Place cheese mixture in the center of the long end and roll into a croissant.

Preheat the oven to 200° C.

Brush the cheese-apple croissants with egg and bake for about 15 minutes until golden brown.
