By beefsteaks are meant those that you have cut from the well-seasoned cleft or roast beef. Beefsteaks (which means nothing else than beef cuts) are quite capital pieces and always bigger, but thinner than fillet steaks.
Cooked, peeled potatoes cut into very thin slices. Heat light butter or butter in a frying pan. Fry potatoes until golden brown and season with salt. Mix eggs with a little salt and pour over. Roast like a pancake and cut into quarters. Heat oil in another frying pan. Fry beefsteaks in it on both sides for about 3 minutes each, so that they are pink inside. Season with salt and pepper. Remove from skillet and wrap each in an egg roll quarter. Arrange on a platter, keep warm. In the roast stock, heat the sliced mushrooms.
Melt butter on top. Arrange the mushrooms with the steaks. Sprinkle some chopped parsley on the pancakes. Put on a small parsley leaf.
