For the apricot cake, first separate the eggs. Beat the egg whites until stiff. Mix egg yolks, soft butter, powdered sugar and vanilla sugar until fluffy. Mix wholemeal spelt flour with baking powder and mix into the yolk mixture. Carefully fold in the beaten egg white.
Pour the mixture into a greased and floured baking pan. Bake briefly at approx. 170 °C. Wash, core and halve the apricots and spread on the cake mixture – finish baking.
