Cut the avocado in half, remove the stone and peel out the flesh with a spoon and place in the hand mixer form. Peel and coarsely chop the garlic cloves and add to the avocado flesh with the herbs and cheese. Now blend the whole thing together to a fairly firm paste and leisurely run in oil and balsamic vinegar to make a smooth mixture.
Season with salt and pepper and perhaps dilute with a little water.
Goes great with various types of pasta, but certainly also tastes good with ciabatta or as a dressing in a leaf salad.
Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
