Peel and finely chop the onion and garlic.

Season pot roast with salt and pepper.

Place meat in roasting pan and cover with onions, garlic and caraway seeds. Add water and bay leaves. Cover the roasting tin with a lid (!) and put it into the cold oven and heat it up to 240 °C.

After about 30 minutes, reduce the temperature to 180 °C and let the roast braise for another 1 hour. Pour liquid over it from time to time.
