Hard boil the egg and then rinse with cold water. Peel and grate finely with a kitchen grater. Cut shrimp in half crosswise. Also halve the avocado, pit it and scoop out the flesh with a spoon. Cut the flesh into small pieces, sprinkle with lemon juice and then finely mash with a hand blender. Put the mashed avocado in a bowl and mix well with shrimp, egg and crème fraîche. Season with lemon juice, pepper and salt.
