Preheat oven to 200 °C. Season saddle of venison with salt, pepper, juniper and thyme. Brown on all sides in a hot pan with a little oil and place in the hot oven together with the pan for approx. 5 minutes. Then let rest at 80 °C or wrap in aluminum foil and place on a hot plate. Then brush poppy seed oil pancakes with lightly beaten egg white, wrap the saddle of venison in it and carefully sear again on all sides with little heat. Deglaze the pan with venison jus, add cranberries if desired, and add poppy seed oil.
