Marinated Parmesan with Caramelized Tomatoes

Break the Parmesan cheese into small pieces, halve the tomatoes, cut the basil into strips and chop the garlic cloves. Heat the olive oil in a pan, add the tomatoes, sugar and garlic. Sauté briefly until hot, caramelize and deglaze with the balsamic vinegar. Stir in the pepper and basil. Then add the Parmesan pieces, toss briefly until the cheese begins to run. Serve immediately with ciabatta.
