For the walnut cake, put the flour on the work surface and add the butter and 80 g of sugar and the egg. Chop with a large knife until small lumps are formed. Knead the dough with your hands and form a ball. Wrap it in plastic wrap and put it in the refrigerator for half an hour.

During this time, roughly chop the nuts. Melt the remaining butter with 150 g of sugar in a pan and cook it tocaramel. Then stir in the cream, honey and cinnamon and let it boil again. Now stir in the nuts and then let the mixture cool.

Line a springform pan with baking paper and grease the sides. Put a small part of the dough aside. Then use the rest to line the pan and pull the dough up the sides as well. Put the nut mixture on top and fold the edge of the dough over it.

Roll out the remaining dough and cut into strips. Spread these strips in a grid pattern on top of the walnut cake. Whisk the egg yolk and brush it on the walnut cake.

Finally, bake the walnut cake in a preheated oven at 180 degrees for 45 minutes.
