For the savory ham and cheese parcels, preheat the oven to 200 degrees. Defrost the puff pastry slices. Line a baking tray with baking paper. Cut the cooked ham into fine cubes.
In a bowl, mix the creme fraiche with 2/3 of the cheese and the cooked ham. Season with salt and pepper. Put 1 tablespoon of filling on each puff pastry slice, leaving the edges free.
Fold the puff pastry tightly and press the seams firmly with a fork. Beat the egg and brush the packets with yolk. Sprinkle with shredded cheese and poppy seeds.
Put the baking tray into the preheated oven and bake the packets for about 15-20 minutes until golden brown.
Then place the finished savory ham and cheese packets briefly on paper towels to degrease and allow to cool slightly.
