Bacon and Cheese Sticks with Climate Cooking

For the bacon and cheese sticks, add rye or wheat flour, salt, baker’s malt, sourdough, cooking oil and dry ferment and water in order in a bowl, stir slowly with a mixer for 10-12 min. Then fold in the bacon or cheese cubes.

When the dough is mixed, sprinkle flour over the dough, cover with a tea towel and let rest for 15 min.Using kitchen scales, weigh out pieces of dough, 100 g each, shape into rounds and form into rustic Weckerln.

Place the sticks on the baking tray, cover and leave to rise again at room temperature for 20 minutes, then place in the oven at 200°C for 20 minutes.
