For the Quinotto with Sweet Potatoes, place quinoa in a colander and rinse. Peel sweet potato and cut into cubes. Cut radishes into quarters or eighths.

Wash wild garlic leaves and cut into fine strips. Cut leek into slices. Sauté peanuts in olive oil, add leek and garlic and add soup.

Add sweet potato, quinoa, ginger and cumin and simmer for 15-20 minutes. Stir occasionally, adding more water if necessary.

Add the radishes only 5 minutes before the end of the cooking time. At the end of the cooking time, the liquid should be completely absorbed.

Then mix in the wild garlic, season the quinotto with salt and serve sprinkled with parsley.
