For gramajo, cut the potatoes into sticks, dab with kitchen paper and fry in hot oil. Drain.
Chop the onion, remove the seeds from the bell pepper and cut into strips. Cut bacon and ham into strips as well. Boil peas in a little water until soft and drain well.
Heat some oil in a pan and sauté onions and bacon until translucent. Add ham, bell pepper strips and peas and stir well. Now empty the eggs over the whole and stir well until the eggs are set. Stir in the crème fraîche. Now add the homemade fries and fry some more. Sprinkle the gramajo with chopped parsley before serving.
