Perhaps your new favorite bean dish:
1. For the dough, sift flour and a little salt into a suitable bowl. Add eggs and milk and stir to form a dough. Mix in mustard and let rest.
2. pour oil into a shallow ovenproof dish and heat in a heated stove at 200 °C /gas mark 6 for 10 minutes.
3. for the filling, melt the butter in a frying pan and sweat the garlic and onion for 2 min, stirring throughout. Do carrots and beans in a saucepan of boiling hot water for about 7 min until cooked. Drain well.
4. add hominy and tomatoes to mustard and herbs in frying pan. Season well and add carrots and beans.
Remove pan from heat and pour batter into it. Mold vegetables into center, return to stove and bake for 30 to 35 min until batter is risen and firm. Bring the vegetarian ‘toad in the hole’ to the table on the spot.
This dish can be prepared in one large dish or in four individual Yorkshire pudding dishes.
