Matevz: Earth apple and bean dish from the Karavanke Mountains

Soften beans in unsalted water (perhaps soak the night before) and drain.

Soften the potatoes in salted water and drain.

Pass both through a sieve.

Add the finely chopped onions and the pressed garlic cloves to the bean – potato – puree, season with salt and pepper.

Fry the bacon cubes.

Put the matevz in a sufficiently large bowl, sprinkle with the bacon cubes and parsley.

The simplicity of the dish can be tempered by a fried egg or possibly a cooked boiled sausage.

Our tip: use a deliciously spicy bacon for a delicious touch!
