Remove the peel from the potatoes and roughly grate and squeeze. Also coarsely grate the onions. Drain the potato juice. Add the stale potato starch, the eggs and salt if necessary and fold into the potato dough and onions. Season with nutmeg if desired, and pepper and salt if necessary. Oil the bottom of a cast iron casserole and cover with bacon slices.

Now spread a layer of the described “Riefkoocheteig” thickly and then cover with a layer of finely chopped spreadable sausage. Fill the Reindl alternately in layers. Optically nicely cover with tomato slices. Bake in the oven heated to 200 °C for about 2 hours until crispy brown.

Our tip: Use a bacon with a strong flavor – so you give this dish a special touch!
