Rinse the long grain rice under running water until the tap water remains clear. Drain. Peel the onion and cut into small cubes. Rinse the peppers, remove the seeds and cut them into small cubes. Rinse the tomatoes with boiling water, remove the skins, remove the pits and cut into small cubes, removing the stalks. Peel the garlic.
Heat the lard in a saucepan and fry the onion cubes until golden brown. Add the tomatoes and peppers, squeeze the garlic, add it and fry briefly. Add the long grain rice and the beans and pour in tap water. Salt, season with pepper, stir and bring to a boil. Cover the lid and simmer on low heat for about 25 minutes until the long grain rice is fork-tender.
