For the shrimp sandwiches, hard boil the egg for 10 minutes, rinse in cold water and peel immediately.

Cut egg and cucumber into small cubes.

Wash and clean the spring onion thoroughly and cut into fine rings.

Mix yogurt with mayonnaise and season with curry, salt and pepper.

Mix in shrimp, green onion, diced egg and cucumber.

Spread the mixture on half of the whole wheat toasts and place the second half of the bread slices. Press down lightly.

Cut the shrimp sandwiches diagonally into triangles.
