For the herb crusted polar cod, cut the polar cod into random pieces and dry with kitchen roll.
Place chopped herbs, flour and breadcrumbs in a shallow bowl each. Mix egg, milk and salt in a bowl until well blended.
Dip the fish pieces one at a time into the herbs so that they are lightly coated all around. Then turn them in the flour. Now dip in the egg mixture and finally place in the breadcrumbs. Press lightly all around.
Pour about 2 cm of vegetable fat into a pan and heat. When the oil is hot enough, put in the finished fish pieces and fry until brown on both sides.
Drain on a paper towel and serve the herb-crusted polar cod. It is best served with potato salad.
