mix with egg, flour, sugar, juice of one lemon, chopped mint and blueberries. Then bake in hot fat until ready to form a cake. Mix the rest of the buttermilk with sugar and lemon to make a sauce.
Make the after eights hot on one edge and ‘stick’ them in a circle on the edge of the plate. Spoon the buttermilk sauce onto the plate and place the little cake on top.
Tip: Lemons add a fresh touch to dishes. Consciously choose ripe, rich yellow lemons!
