Heat oil in a large saucepan over fairly high heat. Pour in bay leaves, cinnamon and cardamom and sizzle for a few seconds. Add the onion and saute until soft. Add the mushrooms to the saucepan and saute until all the liquid is reduced, about 5 minutes. Add long grain rice and salt and stir for 2-3 min. Add water and bring to a boil. Place lid on top. Reduce heat and simmer until all water is reduced, about 20 min. Loosen the pilaf with a fork and bring to the table hot.
