For the salmon burger de luxe, coarsely chop the well boned salmon fillet. Season with salt, pepper and coriander. Stir in the dill and form 2 patties from the mixture.

Heat olive oil in a frying pan, put the loaves in and fry on both sides. Remove and keep warm.

Carefully fry the quail eggs in the same pan to make small waxy fried eggs.

Meanwhile, cut the hamburger buns in half and toast the cut sides. Arrange the bottoms on plates and place the mozzarella slices on top. Cover with arugula and place the salmon patties on top. Lastly, place the fried eggs on top. Season lightly with salt. Arrange the tops only half ajar.
