Boil crabs briefly in a little salted water, lift out, let cool and peel. Strain about 200 ml of cooking water through a hair sieve and bring to a boil in a saucepan. Stir in butter and flour and continue to simmer, stirring constantly, until the mixture separates from the bottom. Remove saucepan from heat and continue to beat dough until it has cooled slightly. Then slowly fold in one egg at a time, beating vigorously again. Mix in crab and let dough rest for at least 15 minutes. Heat oil in a large skillet. Make small doughnuts out of the dough and fry them in the hot oil until golden brown. Lift out, drain on paper towels and serve sprinkled with parsley.
