Have fun preparing this mushroom dish!

Cut the meat into four slices. Season. Roast in half clarified butter 3-5 min. each side. Rinse kitchen herbs, havken. Roughly grate potatoes. Mix with egg, one third flour, chervil, half parsley. Season. Form 8 cookies. Place in 2 rows on foil. Dust meat with flour and spread evenly on four cookies. Fold over other cookies with foil. Fry in remaining lard for 8 minutes. Cut shallots into wedges. Roast with mushrooms in the fat.

Add the rest of the parsley and chives. Season. Add stock. Cook for 5 minutes.

Extra tip: Serve with beet sticks turned in flour and fried.

Eierschwammerln can be frozen well. A new investigation showed: Some food mushrooms, and to which the Eierschwammerl belongs, contain much more healthy contents materials than one assumed so far – very many vitamins, above all B-vitamins, in addition mineral and ballast materials as well as proteins. For vegetarians they are an ideal substitute for meat, because B vitamins and proteins (important for nerves, skin, metabolism) are otherwise only found in meat. Chanterelles are not suitable for drying shr well – they can become tough and leathery. But they freeze very well: blanch for two to four minutes, cool well, dry and freeze.
