For spelt noodles with pumpkin, peel the pumpkin and cut into narrow slices. Fry in hot oil until golden brown on both sides. Season with salt and pepper.
In the meantime, squeeze garlic to the pelati tomatoes and boil down with 2 sprigs of thyme. Season with salt and pepper.
Cook tagliatelle according to package directions in salted water for about 7-9 minutes until al dente. Arrange on warmed plates with the sugo and the pumpkin pieces.
Pluck the thyme leaves and sprinkle over the top.
Use a peeler to shave the Parmesan over the spelt noodles with pumpkin.
