Cook pasta in salted water until al dente. Cut broccoli into fine roses and simmer for four minutes. Drain.

Dice onions and garlic. Mix eggs, milk and cheese, season with salt, pepper and nutmeg.

Heat a tbsp of oil in a coated frying pan, sauté half of the onion and garlic cubes until translucent. Fry half of the broccoli and noodles briefly. Pour half of the egg milk over it. Cover and cook at low temperature for about 12 minutes. Make another omelet with the remaining ingredients. Chop the parsley and sprinkle over the top.
