Instructions:

For the apple duo Striezel, first prepare the dough. Mix all ingredients for about half a minute on the lightest speed with the dough hook, then knead for about 4 minutes on medium speed.

Cover and let rise in a warm place for about 30 minutes. Knead once by hand and let rise again until the volume is about three times the basic dough.

For the apple-nut filling, peel and dice the apples, steam in a little water until soft (there should still be some liquid) and mix with the other ingredients for this filling.

For the apple and curd filling, mix all the ingredients together, making sure there are no lumps left in the apple jelly (or not too big). Roll out the dough and spread one filling on the top and one on the bottom, lengthwise.

Fold each end over the filling and sprinkle the cocoa powder on the remaining middle part of the dough. Continue to roll up the strudel on both sides and place on a baking tray lined with baking paper.

Mix the yolk with a little water and brush the strudel with it. Bake the apple duo strudel at 180 °C for about 40 minutes.
