Instructions:

A simple but delicious cake recipe:

Shortcrust pastry:

Cream sugar and butter, stir in egg, grated zest of one lemon and salt. Fold in flour.

Form dough into a ball and chill for 30 minutes. Grease tart pan (approx. 24 to 26 cm). Roll out the dough and spread out the tarte pan, raising the edges. Prick dough a few times with a fork. Spread with parchment paper and, sprinkle with legumes (e.g. 500 g lentils) and bake for 20 minutes at 200 degrees. Cool.

Filling

Mix eggs and sugar (do not whip too creamy).

Fold in crème fraîche, add lemon and orange juice.

Pour the cream mixture onto the cake base and bake in a heated oven at 180 °C for 30 minutes.

Serve well chilled.
