For the whole spelt ravioli with fresh goat cheese, knead the flour with olive oil, passata, salt and egg to a firm dough. Roll out the firm dough very thin, using a rolling pin or a pasta machine. Cut small squares from the thin strips of dough. Place a small amount of filling in the center of the dough square. Brush the corners of the dough square with water or egg. Then close with a second dough square, pressing the edges of both dough pieces together. For the filling, chop the fresh herbs and mix with the cream cheese, season with salt and pepper. Finally, cook the finished ravioli for a few minutes in hot salted water, remove and rinse with cold water. Serve the whole spelt ravioli with cold pesto, decorate with fresh chopped or whole herbs.
