Make ravioli dough, roll out and cut as described in the basic recipe. For the filling of ravioli di magro: squeeze well defrosted spinach and chop coarsely. Crumble ricotta cheese. Crush garlic. Chop pine nuts and parsley. Mix spinach, ricotta and parmesan cheese, pine nuts and parsley. Season with salt, pepper and nutmeg. Prepare and make filling and dough into ravioli.
For the ravioli ripieni di carne: stir soft fat with egg and cheese. Squeeze sausage meat from casing. Chop chicken breast and parsley. Mix all ingredients together. Season with salt, pepper and a pinch of nutmeg. Prepare and make dough and filling into ravioli.
Serve with melted butter and freshly grated Parmesan cheese.
